69f bird, I would think your angle at the trans sould be positive-lower at the rear. When the pinion angle rises on acceleration your probaly almost 4 degrees in differance between the pinion and trans. You almost need to raise the angle at the trans 2 degrees (drop it down so it's level)or drop the pinion angle 2 degrees so they match better.
What was your working angle of the u-joints? With the car level and u-joints vertical, measure the angle of the driveshaft . Than subtract the angle at each end.

I'm with wrench, and tin injun. If it was a binding problem, all 4 posts and caps would be blue and scored. There appears to be no damage to the ends in the shaft, only the ones bolted into the pinion.

For the driveshaft to work correctly the transmission centerline and the pinion centerline must be parallel. For a street car, parallel can be set up when the car is at rest. For drag racing, parallel can be set up for average "windup" angle the rear end.

Very strange to see the bluing because there is very little relative movement between the rollers & the mating metal [ otherwise the grease would melt ! ] I lean towards what DOC said, are the caps somehow moving away from the shafts, cocking & breaking off the ends? Caps able to move, not secured by circlips?

Another thing is, when installing drive shaft and tightning u-bolts. After running your will need to retorque bolts again. They loosen theirself. Especially after a hard run with slicks. It will be the two upper or lower bolts(which ever way facing).
