The wheels themselves won't rub. The only rubbing you have to worry about is the tire. Depending on width or sidewall height you may rub. But you would have the same problem regardless of 7 or 8" wheels.
If you are happy with the look of your current tires and just want to upgrade to a larger wheel try the following link. You can enter your current size and then plug in 16" sizes to match your overall diameter, tread width ... http://www.1010tires.com/TireSizeCalculator.asp

Probably depends on the backspacing and tire selection.

Can't reiterate the importance of figuring or stating backspacing too much. I have a set of 16x8s from a 4th gen Firebird--6-3/8" backspacing. They will obviously not clear without spacers. You'll need no less than 5" BS to center the wheel, after that you can get a 245/50-16 on them.

I had a set of 16 x 8 wheels with 245/50/16 on my 64 and 66 Tempest. they had 4 3/4" backspacing. Still have em for sale if anyone is interested. American racing wheels. There were originally on my 87 Firebird I had.
