Don't know what the p would be for, but I doubt if it is pitch since the pitch is already specified.

Right, I was saying that perhaps the p is just to note that the "1.0" is the pitch, since the second number is sometimes the threads per unit length. In this case, 1.0 threads per mm is the same as a pitch of 1.0, but if it were 2.0, it would matter, since 2.0 threads per mm is a .5 pitch (I think - I'm by no means an expert on this subject).
