I am not sure what the best top is these days, but I put an easy on on a 97 Mustang about 10 years ago. It was truly easier to install (and cheaper) than a factory style top, but if you want it to look correct, don't use it. Instead of of having the back window part separate from the rest of the top, it was all one piece.
And yes, 64-67 had plastic rear windows from the factory. Importsmasher

Electron makes excellent convertible tops. They use material from Haartz, very high quality. I believe Electron only sells through distributors, not directly. I have one on my ‘63 Corvair Spyder and it looks perfect.
Can’t speak to Easy/EZ on, have never used them.

I put a Kee top on my 67 in 2013. Granted, it doesn't sit in the sun, but the top looks perfect 13 years later.
Plastic zipper, plastic window. Black. I think it's great quality; hopefully they're the same quality in this decade. I got the top from AMES. NOTE: Kee top shape has a very subtle, more "formal", shape where the edges angle up over the rear quarter windows...it's got more of a "notch" when the edge transitions from going up and then leveling off toward the windshield. It's VERY subtle, but when you see it, you will never un-see it. I like it....it's a teeeeny bit more formal looking. Kind of like (on a hugely more noticeable level) the difference between a early 70's Cutlass supreme formal roof and the fastback-ish version Cutlass S.
