I know this is probably a crazy question, but how do I check the fluid on a manual transmission?

It's called Gear Lube. Pull the plug on the side of the tranny. Stick your finger in the hole. If you feel gear lube it's full. If you don't, you need to add 80-90wt gear lube into the same hole.
