This mite seem like a silly question... I have a
oil pan that I deepened to 7 quarts. Do you fill this to 6 quarts or 7? 6 quarts will keep the oil
clear of the crank... so my guess is 6.

If you extended the oil pick-up an equal amount 6 quarts is fine. If you didn't, you'll have to use 7 quarts to be sure that you have enough oil.
