Default Alternative coolant temperature sensor location

Hello all, I have an IA motor and Edelbrock heads. Already have water temp sensor in the cross over for the EFI. I would like to add an analog meter. Rather than modifying the cross over is there any reason why I couldn't just put a temp sensor in one of the threaded water jacket plugs on the rear of the heads? Is there concern with the probe being in a specific coolant flow path?

I wouldn’t hesitate to put one in that location.

The factory put them in the front water crossover until 1972 when they moved it to the side of the cylinder head.
