Do y’all run without a thermostat during camshaft break in?

No.
What would possibly be a good reason for doing that!?

The motor needs to get up to temp fast so that oil flows well and gets kicked up well onto the cam & lifters.

On the few motors I have fired up in a cold winter garage to break in a cam I went thru the trouble of heating up 4 qts of oil to pour in by having then soak in 5 gallons pail of very hot water and then adding them down into the motor and within 3 minutes firing up the motor for the first time.

Makes scenes. This is a bone stock 350 so it’s hopefully easier to manage.

There always Jim Hand’s cam break in method of doing (3) ten minute runs. I reckon that breaks everything in with the assurance there’s no overheating.

Always with T-stat. Start-run to 2200 rpm, take route to nearest highway. Seat them rings, spin them lifters.

With engine in car, I run a thermostat but no antifreeze, just water. It's common for coolant to belch out and make a mess in a restored engine compartment and antifreeze is a mess to clean. To avoid that almost completely, the air lift systems that have been out for a long time makes the first fill super clean by pulling a vacuum on the entire system before adding fluid. This is also a great leak test. On our dyno, the engine must be run without a thermostat. This is because the cooling tower has an adjustable one built into it. I set it to 180-185 during break-in and engine load to 25-30% for nice piston ring break-in.

Good to know. Thanks. Question about Fel-Pro head gaskets. 8518. Is there a block side and a head side of this gasket?

Not to derail: I have that exact tool, but for people not doing this professionally, there are many versions made of plastic that should do the job for about half that price. Shop around for the best deal.

I've done it both ways. Haven't had an issue with either one.

Found a new Elgin “066” cam made before 2007. Then ordered the Hy-lift Johnson lifters from Butler. Heads were rebuilt with new valves, guides, and stock rate springs, milled .015 and exhaust flange dressed on the mill. Everything is painted and my son in law is dropping by this evening to help me set the heads back on the block. This is an in frame job so trying to save my old back…
