Chrome valve covers were used on all 67-69 GTO’s including 2 bbl’s. My first 69 GTO back in the early 80’s was a factory 2bbl. Like a schmuck I didn’t find out it was a 2bbl until after I had bought the car (it had an aftermarket generic chrome open air cleaner assembly.). I would definitely keep an original 2bbl car with its original set up.
In terms of restoring a 2 bbl car the engine bay would be basically a clone of a 350 2bbl LeMans of the same year with the exception of the chrome valve covers. As for how my 2 bbl drove I’d describe it this way.... they typically had 2.93 gears so obviously they don’t feel like a 3.55 geared car but, for the same given axle ratio the 2 bbl is actually a more responsive feeling set up than a Qjet up to half throttle (when the secondaries open). I think this is because the primaries on a qjet are much smaller than the 2 bbl set up. Of course you don’t get that pull like you do when a qjet opens it’s secondaries but honestly if you drove a 2 bbl car with 2.93 gears and a 4 bbl car with 3.23’s and limited both to half throttle you’d probably find the 2 bbl a nicer, zippier car to cruise around in. By the way, I recall reading somewhere that lots of those 2bbl cars were bought new by car rental companies.

Last point, if a buildsheet and/or the original Drivetrain isn't around you can’t definitely identify a 69 2bbl car since the 2bbl option doesn’t appear on the PHS (because it was a no charge option).
Ways to spot a car that originally had a 2 bbl but the engine is gone include the specific coded turbo 400, 2.93 or 2.78 axle ratio would be an indicator as well since those ratios were never offered with any other GTO engine (in 69, in 67-68 350 horse AC cars had 2.93’s). Another indicator on a non AC car would be a single fuel line (any V8 pontiac in 69 with AC and/or a 2 bbl would have 2 fuel lines).
