I have used both they both do well. Right now I'm using header gaskets trimmed so you can't see them.

I used the factory type steel shim gaskets. I never had any problems with them.

This and little high temp silicone. The critical thing is the surfaces have to be flat no matter what you use.

I used header gaskets for a short time with no issues and then I had my engine rebuilt and my builder put the original metal gaskets on and have had no problems in nine years and 20k+ miles.

IMHO, it's hard to beat using the factory implementation.

I have almost always used OEM steel gaskets.
IIRC I did try header gaskets once, but after a short while they blew out (probably because '70 RA manifolds only use three bolts to hold the manifold to the head.

Can the steel gaskets be used when putting the iron manifolds on aluminum heads?
