anyone know if I can use cutouts from a 64 4door HT Cat fenders and quarters to match contours on a 64 2door Convertible Cat ??....they look very close in pictures...

For the front no problem! As for the back they are different!
One could adapt them of course!

how many different side rearview mirrors were there for 64 big cars? I've got a set that I thought would be correct, but the marks left from the base don't match. maybe the marks where from a wrong set??

Two that I know of! the remote that is on the fender. And the standard one that is on the door.
The remote is a 64 only one and is smaller than the 62-63 one!
