many causes
restricted radiator
thermostat
stationary fan impeding air flow
look in 'heating and cooling' lots of good info there

on the highway, air can go anywhere. it follows the path of least restriction. where would you say your thrttle position is during cruising on the highway. Im fighting this same situation on my buddies bandit. on the highway his temp sky rockets. IM really leaning towards his primary jetting is lean. hes at partial throttle so we are NOT into the secondaries yet. try running the car PARKED & watch the temp. BE CAREFUL & get access to your rad & put your hand all over it & see if the temp is the same all over the rad & u dont have blockage. lean, incorrect timing all can make run hot. if the block is 60 over that could cause aswell.... run distillled water NOT TAP & antifreeze or try water wetter

Best cooling mod I ever did and the one that gave the most results was modifying the water pump backing plate. There is a mega post on this topic and it details what you need to do. Check all the obvious first as in the first repsonse to your post and then do this.

maybe your lower radiator hose is partially collapsing at the higher RPMs?

Mark was right in my case...my car was quickly climbing to 220 within a mile of driving...Swapped out the water pump (including new divider plate), fan clutch, and radiator. Put in a 160 thermostat, and poured Royal Purple in with the new coolant. After 10 minutes of idling with no air flow, the car gets up to 210 (90 degrees outside) and stays there--and does not appear to want to go higher, and while driving, the temp drops amazingly to 180-190 within a minute or two and does not appear to want to go higher. The divider plate probably would have done the trick on it's own; however, while everything was apart, wanted to make sure...

Does anyone have a link to this divider plate thread, or can tell me its location so I can search for it?

Its the sticky thread right at the top of the heating and cooling section.

The cast impeller thread with about a million posts in it by now.
