Default Body to Frame Shimming?

I'm curious to know if there is a shimming procedure of some sort when installing the body to the frame(1970 GTO).

The reason I ask is because I'm having to redo some "professional" sheet metal work and while reassembling panels I'm trying to make sure everything is level and plumb.

While trying to get decent measurements I noticed that the rear drivers side body mount is about 1/8" thicker than the one on the passenger side. Is this typical or am at the start of another rabbit hole with this car?

When I did my frame off there were a couple of factory body mount shims there.
