I put a Performance Years Repop (slang for reproduction) dash pad in my 68 non-AC and it is EXCELLENT! I just pulled out the original and put the new one in place.I had my whole interior completely gutted so I decided to do it right, but I have also seen a few of the dash cover caps installed and they look good when carefully installed. They only make black reproduction dash pads so I had to spray paint mine using vinyl dye, but it all worked out GREAT!
I would recommend using wide masking tape to protect the metal part of your dash above and below the pad area when you install the new pad because there are metal "pins" that hold the dash pad in place which can scratch the dash face while you are jockeying the pad in place.
