X2 on the Kimber. By far the best trigger of any gun I own(1911). But very picky about ammo as you said. One thing, you do have to send 1500 rounds or more down range through them before they become more tolerant of different ammo. And that is what upsets people about Kimbers...but, once broken in, I haven't come across a more accurate and ideal trigger than the Kimber...yet..but I'm working on it! lol
