That's raw metal (aka "body in white"). The fixture is being used to locate the body side to the underbody structure so that it can be spotwelded in place. This all takes place before paint.

These videos are notorious for skipping around and not showing stuff in chronological order.

Denting is always a concern (anywhere in the plant), but any problem areas they find on the fixture will end up with lamb's wool and tape covering it all up. After the first few hours you get the hang of it anyway.
