Maybe you could kill two birds with one stone here. Does your Dad have a welder? If so, you could mock up a sculpture, glue it together and when you give it to him tell him you really wanted to weld it up and would love to have him teach you. He will dig the stuff you made and will enjoy the time you spend together. I still get a great feeling when I do something simple that I can trace back to my Dad directly teaching me. Whether it's sharpening a knife or building a campfire. Those things will be with me forever and I like that connection.
A quick google of "motorcycle sculpture" brings up lots of ideas. Some more complex than others. And the beauty of it is that you can use them for ideas, but it can't be "wrong". Use what you have around, make it how you like it.
I'm sure he'll be thrilled no matter what you decide. The fact that you are putting time/effort into it will not be lost on him.
