Cool pictures! About two years ago I drove my 68 Bonneville wagon to the election polls. One of the campaign workers, 70 yr old woman, came over quickly and identified the car to the year and options. She worked for GM in Arlington, TX for three years. She was upset to the change of the union. Back in the day she told a story of how another worker that worked on the line had a heart attack and sat on the still moving line until break an hour later. Unfortunately he later died. Big difference from today where you cant even change your own light bulb and the line stops for any safety issue! She said she installed headliners.

Not necessarily. I'm not convinced all the plants built in VIN order.

They definitely would have been "grouped" (ie, for the most part VINs that were close would have been nearby) but not necessarily one right after the other.

Additionally, for plants that built multiple models and nameplates (ie, Chevy, Pont, Olds) those models and nameplates usually have a different VIN prefix and (potentially) serial number sequence - so - you wouldn't know if your car was immediately followed by an Olds or Chevy and then his car (for example).

Did you notice that both those V-8's have the #1 spark plug wires stuck onto a head bolt stud? This must signify that they have not had their final timing set yet.
The second engine appears to be a 'ZN' 400 intended for a 'B' body.
But what is the other display V-8 with A/C & a cruise control servo? Not positive, but I'm thinking it's a '70 400 intended for a 'B' body?
