I polished my rocker panels and I'll tell you what, that is some hard stuff to polish the scratches out of. Because of what it does, it takes a constant sand blasting from the road. The good thing is that as long as it's straight, it'll look good. The top edge is about all you see.
What color top? If I recall, you have white but I bet a black top would look great with that Carousel and a white interior.

These days I have owned and seen so many GTO's I get more "interested" in a nice Lemans or Tempest. You just don't see that many nice ones anymore. They either ended up as clones or donor cars for GTO's. They have the same classic body lines but a uniqueness of their own.

Around here, a year is a short time. I've been working on mine for 10 years and still have interior to go. It sat outside at the painter's for as long as you've had your car. As for knowing what you're doing, you know a lot more than you did a year ago. It's a nice car...
Give yourself and your car some credit for a change.

I purchased my Lemans vert in 1998. It drove but the only electrical things that worked were the engine and the headlights. You get the idea. I patched it up to make it more roadworthy but didn't get started on the real work until 2009. And didn't get "finished" until 2011. And there is never really "finished" with these old cars. Swapped the rear end out in 2012, I still want to put a better top on it, and it recently developed a suspension clunk that I have yet to find...
You are way ahead of where I was only a year later Darth! You are doing great!
